Ingredients

For the overnight oats—

  • 1 Earl Grey (or jasmine) tea bag
  • 1 cup hot boiling water
  • 4 tbsp maple syrup (or honey)
  • 2 cups rolled oats 
  • 2 cups milk of your choice
  • 1 tsp vanilla extract
  • 2 tbsp chia seeds (black or white) 

For the poached pears—

  • juice of 1/2 lemon
  • 3 firm pears, cut in half, core removed
  • 1 cinnamon stick
  • 3 star anise
  • 2 hibiscus tea bags 
  • 2 cups apple juice
  • 2 tbsp food grade rose water

Instructions

For the overnight oats—

  1. Steep tea bag in boiling water for 5 minutes, then discard and pour fragrant tea into glass jar (1 litre capacity, approx.)
  2. Add remainder of ingredients. Whisk well. Refrigerate for 6-8 hours, or overnight. 
  3. Add more honey to taste before serving, if necessary. 

For the poached pears—

  1. Squeeze lemon juice over pears to prevent browning. Add remaining ingredients into a medium, shallow pot or skillet over a medium heat. Sit pears in mixture with cut side face down. The juice should cover around half the pears.
  2. Cook for about 40 minutes until juice reduces and pear flesh begins to blush. Serve warm or cold with overnight oats.
