Did someone order doughnuts with zero guilt? (But still allllll the fixings?)

So I love the idea of doughnuts because they represent pure indulgence; the symbolism usually accompanied by an image of shirt-crumbs and sticky fingers.
But I also kinda don’t dig doughnuts for the same reason. One fried ring soaked in sugar, and halfway through my stomach and I are feeling So.Many.Regrets. That’s why I’m freakin IN LOVE with these baked-not-fried, healthy-fied doughnut babes.

Whats the Secret Ingredient in Baked Doughnuts?
The secret star of this healthy doughnut recipe is apple cider vinegar. When used in baking, ACV helps to aerate the sponge, making a pillowy-soft texture of dreams.

The Best Doughnut Glaze EVER
The other star—although hardly secret—is the two tone tahini glaze. One half straight tahini + maple, the other a tahini chocolate twist. The choc is made all the more delish (if that’s even possible, given that tahini chocolate glaze is already delish in the superlative), by the cheeky addition of a few orange essence drops.

HEALTHY BAKED TAHINI CHOCOLATE DOUGHNUTS

Outrageously good doughnuts that are healthy, too! Baked for a pillowy-soft texture, and dunked in an indulgent, two-tone tahini choccie frosting.
Ingredients
For the doughnuts—
- 2 cups plain flour
- 2 tsp baking powder
- 1/2 tsp fine sea salt
- 4 tsp orange essence extract (can sub for zest of a large orange)
- 1 + 1/3 cup milk of choice (320ml)
- 1/3 cup maple syrup or honey
- 1/3 cup dark brown sugar (not packed)
- 1/3 cup olive oil
- 2 tsp apple cider vinegar
- 2 tsp vanilla extract
For the tahini glaze—
- 4 tbsp tahini (light and dark) — stir tahini to fully incorporate any separated oil
- 4 tbsp maple syrup or honey
- 4 tsp milk of choice
For chocolate tahini glaze—
- 4 tbsp tahini (light and dark) — stir tahini to fully incorporate any separated oil
- 2 tbsp cocoa powder
- 4 tbsp maple syrup or honey
- 4 tsp milk of choice
Instructions
- Preheat oven to 180 C/ 380 F/ Gas Mark 4. Grease a doughnut pan well, using either butter or coconut oil.
- Whisk together orange essence, milk, maple syrup/ honey, brown sugar, olive oil, apple cider vinegar and vanilla. Set aside.
- In a mixing bowl, sift together flour, baking powder and salt.
- Add wet ingredients to dry and mix until smooth. Fill doughnut moulds 2/3rds of the way and bake for 10-12 minutes, until doughnuts are slightly springy to the touch. Leave to cool completely before carefully removing from moulds.
For the tahini glazes—
- Using two separate small bowls, mix the glaze ingredients. Add more milk if you need to thin the glaze, only one teaspoon at a time. Add more maple syrup or honey to taste. Smooth onto cooled doughnuts.
